Unter Histamin-Intoleranz wird eine Unverträglichkeit des mit der Nahrung zugeführten Histamins verstanden. Als Ursache wird eine Abbaustörung durch die beiden bekannten Histamin-abbauenden Enzyme Diaminoxidase (DAO) und Histamin-N-Methyltransferase (HNMT) angenommen. Die Patienten leiden unter allergieähnlichen Symptomen.
